Food Focus: Strawberry Pancakes

It's no secret that I spend hours scrolling through Pinterest on a daily basis - amongst the pins of flawless faces and street style snaps is a board dedicated to my other love... Food. A quick scroll through my dashboard last week left me drooling over pancakes with a berry-licious filling, so when I was left unsupervised in the kitchen over the weekend I decided to have a crack at it.

Ingredients
100g Flour
30g Sugar
100ml Mill
1 Medium Egg
4 (or more) Medium Strawberries

I mixed my dry ingredients together first, followed by the milk and egg, before pouring a little at a time into a lightly buttered frying pan. Once the mixture had been spread to it's desired shape I dropped the strawberries into the mixture. This left the strawberries open on one side, but if you want the fruit coated in pancake mixture then simply pop them in your mixing bowl/jug with the mixture (you can see I did a mixture of both in the last photo). I cook them until they're golden brow - or as close as possible - on both sides. Repeat until the mixture has been used up and then eat (and Instagram) your heart out.

  8. I don't like strawberries, but if i did Id make these! I like the idea of adding something extra into your morning pancakes.. my personal choice would be chocolate... I'm not the healthy eating kind! ;-)

  24. Oh man, I tried so many pancakes and these ones are really good! You should also try the so-called healthy pancakes, using only a banana and an egg! They are one of my favorites. I have a post about it on my blog:)
